Our pure Irish honey comes from the bees in our many apiaries in West Cork. The bees travel far and wide collecting nectar and pollen from plants such as blackberry, dandelion and clover among many others. We have two types of Irish honey – comb sections and jars. The comb sections are taken off in late August and packaged immediately. Frames of comb honey are also taken off at this time and the honey is extracted from the frames, sieved and bottled. Some of our honey does become crystalised (solid/semi-solid) at times. This is a sign of a high-quality product. Heating it gently, uncovered in warm water will bring it back to its liquid state.
